A fusion between the humble Maggi and the intense and saucy Hyderabad Style Chicken 65

An invention credited to my hungry belly
I happened to be hungry one evening, and I had leftover Chicken 65 from our lunch. I didn’t want to have it with rice this time, because I was craving noodles. So I mixed the two. And I think I was also surprised how good this tasted.
Fair warning to noodle lovers : You might not be able to stop eating this once you start! It’s spicy, tangy, the cucumbers give a relief from the heat with its texture and freshness and the chicken is oh-so-juicy!Β
If you have low spice tolerance, please adjust accordingly. I am leaving the recipe below
Ingredients
For the Chicken :
- 250g Chicken breast
- 2 tbsp yoghurt
- 1 egg [optional, if you are allergic. Just add a little more flour or even rice flour for good crunch]
- 1/4 tsp cumin powder
- 1/4 tsp coriander powder
- 1/2 tsp Kashmiri Red Chili powder
- 1/2 tsp salt
- 1 tsp finely chopped curry leaves
- 3 tbsp Corn flour or 2 tbsp AP flour(maida) or 1 tbsp maida + 1 tbsp rice flour (Add this after marination is done)
For the sauce mixture :
- 1/2 tsp Kashmiri Red chili powder (1/4 tsp if you have low spice tolerance)
- 1/4 tsp Cumin powder
- 1 whole packet of Maggi Masala
- 3 tsp vinegar
- 2 tsp sugar
- 1/4 tsp salt
- 2 tbsp water
Instructions
Some additional things to note :
- If your spice tolerance levels are low, then it is best to Use Kashmiri red chili powder. Kashmiri red is used for colours in different dishes. But even then it can be intense for someone who doesn’t eat such dishes, so, please use half the amount I have given
- Cook the Maggi in boiling water. For 2-3 minutes. Don’t over cook them.
Step by step instructions :
- Prepare the sauce with given ingredients first. Cover and set it aside.
- Move onto marinading the chicken : Buttery a chicken breast and cut it into small cubes. Add all the ingredients mentioned in the ingredient list, and marinade it for 15 mins -1 hour
- Fry the chicken cubes on medium to high heat until all sides are golden brown.
- Leave it on a colander
- Cook the Maggi noodles and once it is cooked immediately drain and wash under cold water.
- In a pan, heat 2 tbsp oil. You can use the oil that was used to fry the chicken with.
- Add cumin seeds. Once it starts sputtering, add ginger, minced garlic, curry leaves, and green chili. Saute until golden brown
- Add the sauce and keep stirring until the sauce reduces to a sticky consistency. The reference can be found in the video, where I have shown how the sauce separates.
- Add in the fried chicken, Maggi noodles, and mix everything well
- Garnish with you favourite raw vegetables. I used 1/2 a cucumber, 1/2 a carrot, lime wedge, 1/2 an onion.Β
Serve warm, and enjoy!

This should be somewhere around 400-500 calories. Instead of frying the chicken, if you can bake it, it will be 50 calories less I believe. It’s a full meal
